I have yet to encounter a soul who doesn’t heart spaghetti. It is so classic, simple, and comforting. Here is my take on it: if it ain’t broke don’t fix it. I like to throw classic meatballs in for good measure. Gotta keep the natives happy, know what I mean?
I feel the this is something that is so lucid that it does not need too much gussy-ing up. We’re gonna keep this low key and let the flavors just shine, shine, shine. Nothing too fancy here folks.
The usual suspects one would find in the ole sketti…Diced tomatoes, red wine, onion, garlic, fresh basil, thyme, rosemary, red pepper flakes, oregano, and tomato paste.
Don’t let this simmering pot of yum scare you. It looks messy and uninviting, but mark my words it will rock your little boat.
One more time. Just so you can see what you need to make for dinner tonight.
Ingredients:
- 2 Tablespoons Olive Oil
- 1 whole Onion, Diced
- 6 cloves Garlic, Minced
- ¾ cups Red Wine
- 1 Tablespoon Tomato Paste
- 2 sprigs Thyme
- ½ cups Fresh Basil
- 2 sprigs Rosemary
- 3 Tablespoons Italian Seasoning
- 1 Tablespoon Oregano
- 1 Tablespoon Pepper
- ½ teaspoons Sea Salt
- ½ teaspoons Garlic Salt
- ½ teaspoons Red Pepper Flakes
- 3 cans 14 Oz Diced Tomatoes, No Salt Added
- FOR THE MEATBALLS:
- 1 pound Organic Lean Ground Beef
- ½ cups Whole Wheat Bread Crumbs
- 1 whole Egg
- 2 Tablespoons Worcestershire Sauce
- ½ teaspoons Pepper
- ½ teaspoons Sea Salt
- ¼ cups Parmesan Cheese
- GARNISH:
- ½ cups Parmesan Cheese
- ¾ package Whole Wheat Spaghetti Noodles (or servings for 6)
Heat oil in dutch oven over medium high heat. Add onion and garlic. Let bloom for 2-3 minutes. Now add in the wine and let the flavors mend. Next, add in tomato paste. Now add in all seasonings and herbs. Let simmer 2 minutes. Now add in diced tomatoes. Let this mixture simmer.
Meanwhile, make your meatballs. Simple combine all meatball ingredients in a large bowl. Roll into 1 inch balls.
In large cast iron skillet heat 1 T oil. Add meatballs to skillet and cook until nice and brown on all sides. Add them to the spaghetti sauce once they are browned.
Make sure you spaghetti sauce gets a good 1 1/2 to 2 hours of simmer time. This will ensure that the flavors can marry and make babies. Stir your sauce occasionally to make sure it does not stick to the bottom. Add a little more wine if needed.
Serve with whole wheat spaghetti noodles. Top with freshly grated Parmesan cheese.
