Yes.  I know.  Who am I?!  Well in order for you to understand this, I will need to go back.  Back to my youth, that happened what, like…5 minutes ago.  Enter a little girl with long brown pig tail braids, who loved her roping horse, Rebel, summertime, and ANYTHING made with milk gravy.  Pretty much in that order.

Whenever I got to pick what Mama was making for dinner you can guarantee that I voted for chicken patties and milk gravy, biscuits and gravy, or some other chicken concoction involving gravy.  It’s just what made my little wheels turn.

Flank Steak

Hey yo’.  I’m sorry I felt the need to have an opener…a dorkish one at that.

What is it about a good piece of steak that makes everything seem so right?  Maybe it is because I become like a dictator in my home and only allow a small ration of it every week.  If it was up to other parties involved we would feed on beef constantly.  There would be a never ending supply of steakums, jerky, and beef sticks laying around to be consumed at any given moment in time.

Bacon & Blue Burgers

Goodness Gracious Good Golly.  This burger is dangerous.  I love a great black bean burger, turkey burger, or shroom’ burger.  But nothing can compare to the amazingness of a REAL hamburger.  This was a burger of beauty, surpassing all others by far.  It had to be the bacon.  Oh that bacon, and the blue cheese.  How can you go wrong with bacon and blue cheese?  You can’t.  Simple as that.

After consuming this delicacy I found myself in a wonderful dinner daze.  Ever have those?  I’m pretty sure Guy Fieri is constantly in a state of food jubilation.  This would explain why his bleach hair is always perfectly spiked and his forearm sweat bands are always so fresh.

Spaghetti & The Classic Meatball

I have yet to encounter a soul who doesn’t heart spaghetti.  It is so classic, simple, and comforting.  Here is my take on it: if it ain’t broke don’t fix it.  I like to throw classic meatballs in for good measure.  Gotta keep the natives happy, know what I mean?

I feel the this is something that is so lucid that it does not need too much gussy-ing up.  We’re gonna keep this low key and let the flavors just shine, shine, shine.  Nothing too fancy here folks.

The usual suspects one would find in the ole sketti…Diced tomatoes, red wine, onion, garlic, fresh basil, thyme, rosemary, red pepper flakes, oregano, and tomato paste.

Don’t let this simmering pot of yum scare you.  It looks messy and uninviting, but mark my words it will rock your little boat.

One more time.  Just so you can see what you need to make for dinner tonight.

Ingredients:

  • 2 Tablespoons Olive Oil
  • 1 whole Onion, Diced
  • 6 cloves Garlic, Minced
  • ¾ cups Red Wine
  • 1 Tablespoon Tomato Paste
  • 2 sprigs Thyme
  • ½ cups Fresh Basil
  • 2 sprigs Rosemary
  • 3 Tablespoons Italian Seasoning
  • 1 Tablespoon Oregano
  • 1 Tablespoon Pepper
  • ½ teaspoons Sea Salt
  • ½ teaspoons Garlic Salt
  • ½ teaspoons Red Pepper Flakes
  • 3 cans 14 Oz Diced Tomatoes, No Salt Added
  • FOR THE MEATBALLS:
  • 1 pound Organic Lean Ground Beef
  • ½ cups Whole Wheat Bread Crumbs
  • 1 whole Egg
  • 2 Tablespoons Worcestershire Sauce
  • ½ teaspoons Pepper
  • ½ teaspoons Sea Salt
  • ¼ cups Parmesan Cheese
  • GARNISH:
  • ½ cups Parmesan Cheese
  • ¾ package Whole Wheat Spaghetti Noodles (or servings for 6)

Heat oil in dutch oven over medium high heat. Add onion and garlic. Let bloom for 2-3 minutes. Now add in the wine and let the flavors mend. Next, add in tomato paste. Now add in all seasonings and herbs. Let simmer 2 minutes. Now add in diced tomatoes. Let this mixture simmer.

Meanwhile, make your meatballs. Simple combine all meatball ingredients in a large bowl. Roll into 1 inch balls.

In large cast iron skillet heat 1 T oil. Add meatballs to skillet and cook until nice and brown on all sides. Add them to the spaghetti sauce once they are browned.

Make sure you spaghetti sauce gets a good 1 1/2 to 2 hours of simmer time. This will ensure that the flavors can marry and make babies. Stir your sauce occasionally to make sure it does not stick to the bottom. Add a little more wine if needed.

Serve with whole wheat spaghetti noodles. Top with freshly grated Parmesan cheese.
