5 Ingredient Peanut Butter Cookies

I have been such a terribly, unreliably, selfish blogger lately.  I’m sorry.  It’s my new happs here at This Country Girl Cooks headquarters.  I have been incredibly geeked out, more than my usual, and for this I’m sorry.  But, know I have not stopped whipping up the recipes!  I’m in my kitchen, bare foot-n-all, hair a wild rats nest pony tail, cranking out mouth watering recipes, dreaming about my new coming blog, and wanting to say thank you.  Thank you for being patient with me while I get this little guy all dialed in.  And I said, shortly my people.  Shortly you will see the NEW light.

I’m gonna leave you with these to salivate over.

Oh, and did I mention they only take 5 INGREDIENTS!? Yes, the easiest, yummiest, cookies I have baked in a-lawng time.

Pecan Pie Brownies

BIG, I’m talking big things are happening at the Country Girl Cooks headquarters.  By headquarters I’m referring to me, my laptop, and my antique pine farmhouse coffee table that I do most of my editing.  Changes are a happening for my little blog.  Thanks to the help from a wonderful web designer.  I’m having it worked on as we speak, therefore I probably won’t be able to do much posting over the next few days.

I wanted to keep all of my imaginary friends in the loop.  No I haven’t went on a hiatus, never to be seen or heard from again.  I’m still kicking around at large, whipping up recipes and cooking away.  It’s coming on Thanksgiving after all.  So I will leave you with this last Thanksgiving inspired post for the time being!

Giant White Chocolate Gingerbread Cookies

Is this too early?  Is it too soon to do this to you?  I think not.

I mean lets call this what it is.  Serious Holiday Eats Time!  I think gingerbread is fully acceptable from October on through to January.  But I can be somewhat non-conventional; I wear white jeans past labor day (weather appropriate, of course), I make pumpkin cookies in August, and sometimes, just once in a while when the mood strikes I turn on the old Christmas tunes in July. What, it’s perfect and makes me happy.  Just try to steal my happiness from me, because it WON’T work.

These cookies are just about perfect too.  Super soft, spicy, and sweet with the white chocolate chips.

Rum Raisin Oatmeal Cookies

What is it about the holiday season that makes booze and food so much more enjoyable?  Before you try to paper-cut my kidney for mentioning the holiday season; hear me out.

I have a few theories why people L-O-V-E booze, especially during holidays.  I like to think it’s because:

1. The whole over-haul of family time.  Sometimes it’s just over-stimulating.  That’s all I’m saying.

Apple Cinnamon Sandwich

I like to think of myself as a Pollyanna.  Not always, but in my perfect world; I am Pollyanna.  Trying to see the all the good and positive in life.  Giving the benefit of the doubt, and always using linen napkins.

Oh, I also like to use a star cut-out on whatever I can get my little fingers on.  In this case it was coring my apples.  That’s just me.

Rocky Path Brownies

I think I’ve been seriously shirking on my blogging duties as of late.  I find myself with my hands in my armpits wondering what just happened!  Where am I?  What is going on?

It’s that Gone Girl book!  I cannot stay out of it.  I’m about 1/3 of the way into it and I am hooked.  Seriously HOOKED.  I am totally caught in the middle of the brilliant writing and seriously serious mind games.  Like, SERIOUSLY.  Have you read or heard of this masterminded genius book?

Happy Halloween!

Happy Halloween my little goblins!  I hope you find yourself elbow deep in a bowl of delicious confections today.

I feel I have been a mad woman as of late.  We have been without the internet for 6 DAYS!!!!!  OH MY LAND!  But after literally DAYS of battling it out with the internet tech geeks we finally got it up and a going.  They like to forget about us because we live in the boonies.

 

 

 

 

 

 

 

While I was listening to my tech helper frantically typing away, probably terrified for his life because the woman on the other end was either:

a. constructing a bomb to blast Century Link off the face of the earth

b. eyes buldging, pulling her hair out one strand at a time

c. shaving down a piece of pipe to use as a shiv to jab at the next person that tried to tell her he could not help her, and they needed to send a tech out (AGAIN)

But luckily, I kept my cool, and did this cookie monster instead while I was stuck on the phone, (for two hours!!!!!), and I needed to use my precious Halloween time wisely.  This was a good choice for me and I feel strong about it.

I have been very wishy-washy with my blog posts and for that I’m sowwy.  But doesn’t this googly eyed molasses ginger cookie make it all better?!

Happy Halloween my friends!  Belly up and enjoy some sugary treats today!

 

 

 

 

 

 

 

Servings for Jumbo Ginger Molasses Cookie

2 TB butter

2 TB mollasses

3 TB brown sugar

1/2 t vanilla

6 TB white whole wheat flour

1/4 t baking soda

1/8 t sea salt

1/8 ground ginger

1/4 t cream of tarter

Preheat oven to 350.

In bowl mix butter, molasses, sugar, and vanilla.  Combine well and then add flour, baking soda, ginger, salt, and cream of tarter.

Place dough on cookie sheet and bake 11-13 minutes until edges are firm and cookie is set in middle.  Do not over bake.  Remove from oven, let cool, and decorate to your hearts content!

Witch’s Broom Cookies

These are because I can be a bit of a witch sometimes.  Not all the time, but when the right mood catches, I suggest that you don’t come in contact with me.  This is more a statement to the man I co habitat with.  Poor fella.

I think witches at Halloween are so appropriate.  I also really love their style.  I think they are totally underrated.

Therefore, I whipped myself up some festive little flour-less peanut butter cookies.  Complete with broom stick and all.  I know your thinking…what’s it like to live inside that head of mine?  I ask myself this all the time.  I have to answer for that either.  Just embrace it.

Caramel Mallow Popcorn Balls

It’s my BURF-DAY!  Happidy Burfday to me, my, I!

I have always loved mixing Halloween festivities with my Birthday.  Thinking back my Mama always had festive Halloween parties for me.  Complete with “witch’s brew” (Root beer with dry ice so it was a foggy, mysterious, bubbling, amazing, concoction), pumpkin painting, pinatas, and B.Y.O.C. (Bring Your Own Costume) dress up party, hello!  It was the greatest.  All the cool kids thought so.

So today, instead of cake I’m going with caramel mallow popcorn balls. It just felt right.
