5 Ingredient Peanut Butter Cookies

I have been such a terribly, unreliably, selfish blogger lately.  I’m sorry.  It’s my new happs here at This Country Girl Cooks headquarters.  I have been incredibly geeked out, more than my usual, and for this I’m sorry.  But, know I have not stopped whipping up the recipes!  I’m in my kitchen, bare foot-n-all, hair a wild rats nest pony tail, cranking out mouth watering recipes, dreaming about my new coming blog, and wanting to say thank you.  Thank you for being patient with me while I get this little guy all dialed in.  And I said, shortly my people.  Shortly you will see the NEW light.

I’m gonna leave you with these to salivate over.

Oh, and did I mention they only take 5 INGREDIENTS!? Yes, the easiest, yummiest, cookies I have baked in a-lawng time.

Cranberry BBQ Sauce & Pulled Turkey Sandwiches

Did you all survive the dreaded black Friday?  I personally turned into a hermit.  Seriously.  I didn’t ever leave the house that entire day.  The sheer fear, dread, and anxiety of being trampled to death had me hold up like a recluse, refusing the venture out into the wild unknown.  I decorated from Christmas instead.  It was perfect.

Thanksgiving Leftover Turkey, Kale, & Sweet Potato Hash

This could very well be my favorite day of the year.

I love waking up and knowing there are loads of leftovers awaiting me in my fridge.  I’m talking awesome leftovers too. So many  options and possibilities.  The breakfast hashes, the TURKEY SANDWICHES, the turkey soups, turkey pot pies…aww lawdy!  I can ramble on and on and on.

By the way, how was your Thanksgiving?  Did you manage to lounge around, and have a lazily food filled day, or did you have to dodge shrapnel and landmines at forced or uncomfortable family gatherings?  I defiantly had an amazing day full of fabulous food and wonderful family.

Ramblings & Thangs

It’s nearing Turkey time my little hob gobblins.  I know I’ve been totally M.I.A and for that I apologize.   BUT…my little blog-o-sphere is almost finished so that’ll be launching soon, soon, soon.  AND I haven’t stopped tinkering about and I’ve stumbled across some pretty good things I need to share.

1. I know we are in holiday season kick-off mode and love is all around.  I’m all about the love.  But this article made me laugh, 23 Reasons Food Is Better Than Love read it.  I think it correlates to the holiday season and the biggest food day of the year.

2. If you’re being a total toe-nail biting, eyes aglaze, too many options, wishy-washy foodie and have yet to make up your mind about the pies that will grace your Thanksgiving dessert table (no names…ADRIENNE RHEA) check out this pretty  little slide show.  It may  help…or just further your indecisive state.

3. Is it okay to eat a bowl of peanut butter, with frozen, soft mashed blueberries stirred in and call it lunch?  Seriously.  Sometimes I don’t know what is wrong with me.

4.  What is it with people and the black Friday rage?  I just witnessed a shirt that read, “I survived Black Friday”.  Yes it happened.  Yes, sadly, there are been some people that did not.  Uh-merica, am I right?

Pecan Pie Brownies

BIG, I’m talking big things are happening at the Country Girl Cooks headquarters.  By headquarters I’m referring to me, my laptop, and my antique pine farmhouse coffee table that I do most of my editing.  Changes are a happening for my little blog.  Thanks to the help from a wonderful web designer.  I’m having it worked on as we speak, therefore I probably won’t be able to do much posting over the next few days.

I wanted to keep all of my imaginary friends in the loop.  No I haven’t went on a hiatus, never to be seen or heard from again.  I’m still kicking around at large, whipping up recipes and cooking away.  It’s coming on Thanksgiving after all.  So I will leave you with this last Thanksgiving inspired post for the time being!

Turkey Apple Melt

This. Is. Possibly. The. Greatest. Sandwich. Ever.

If you find yourself belly up in couch cousins the day after tha Thanksgivins feast smorgasbord food-o-rama extravaganza, feeling extra lazy and extra hungry come lunch or dinner time I’ve got a superb recipe for you.  Actually this isn’t really a recipe.  It’s just a great sandwich idea.  Perfect for leftover usage of the Bird.

Giant White Chocolate Gingerbread Cookies

Is this too early?  Is it too soon to do this to you?  I think not.

I mean lets call this what it is.  Serious Holiday Eats Time!  I think gingerbread is fully acceptable from October on through to January.  But I can be somewhat non-conventional; I wear white jeans past labor day (weather appropriate, of course), I make pumpkin cookies in August, and sometimes, just once in a while when the mood strikes I turn on the old Christmas tunes in July. What, it’s perfect and makes me happy.  Just try to steal my happiness from me, because it WON’T work.

These cookies are just about perfect too.  Super soft, spicy, and sweet with the white chocolate chips.

I have been so totally geeked out lately!  Think a hummingbird on the crack rock.

That’s because Thanksgiving is nearing and I cannot  help but get pumped up.  Blasting around, making lists, time schedules, and menus.  Thanksgiving and Christmas, well they are, kind of my jam.

I’ve taken it upon myself recently to bring to you some lovely Thanksgiving inspired ideas.  Outside the usual fixings on Turkey Day.  Some traditional, some tweaked in small little ways, and just some Adriennetastic recipes.

BBQ Chicken "Nachos"

Let me tell you a wittle seetwet.  I like to eat cheese.

Lots of cheese.  Fried cheese, cheese quesadillas, grilled cheese sandwiches, baked bree cheeses, lasagna, or basically anything that has a generous layer of cheese coating it, I’m going to be a big supporter.  So as you can imagine, nachos hold a special place in my heart.
